ANTIPASTO: TORTA SALATA ALLA ZUCCA E FUNGHI BY @GLICERINIA
PRIMO: RISOTTO DI ZUCCA E FUNGHI PROFUMATO ALL’ARANCIA BY ME
SECONDO: PATATE DOLCI CON PROVOLA PICCANTE BY @LASCHISCETTA
DOLCE: APPLE PIE BY @GOOD_FOOD_LAB
Risotto di zucca e funghi porcini profumato all’arancia
Ingredienti:
Brodo vegetale
400g Riso carnaroli
3 Scalogni
300g Zucca
150g Funghi porcini freschi o surgelati
(Nel caso i funghi siano secchi vanno prima ammorbiditi)
1 Arancia biologica
Vino bianco per sfumare
Parmigiano e burro per mantecare (facoltativi)
Olio EVO
Sale
Rosmarino
Procedimento:
Prepara a parte il brodo vegetale inserendo la zucca tagliata a pezzi.
In un tegame fai rosolare lo scalogno con i funghi porcini tagliati a piccoli pezzi e l’olio.
Quindi aggiungi il riso e fai tostare bene.
Sfuma con il vino bianco e quando e’ completamente evaporato, piano, piano aggiungi il brodo mano a mano che si consuma mescolando bene.
Quando la zucca e’ cotta toglila dal bordo e frullala fino a renderla cremosa. Aggiungila al riso.
A parte fai intiepidire poco olio EVO con la scorza dell’arancia biologica lavata e asciugata tagliata a julienne e un rametto di rosmarino.
Quando il riso e’ quasi a cottura aggiungi a piacere parmigiano e burro e fai mantecare per 5 minuti.
Servi aggiungendo poco olio profumato.
