A casa mia agosto è il mese delle conserve!
Il mese dedicato a mettere via la frutta e verdura dell’estate.
Da quando sono bambina ho sempre visto mia nonna, mia mamma e le mie zie dedicare tre o quattro giornate intere a preparare marmellate, giardiniera e naturalmente…passata di pomodoro!
Noi siamo una famiglia numerosa e la produzione doveva essere consistente!
Da qualche anno ho trovato un modo alternativo (e per me molto più pratico)
di fare la conserva e le marmellate.
Le preparo usando l’estrattore!
Ti spiego in 5 passaggi come si fa a fare la passata di pomodoro con l’estrattore!
- Taglia a pezzi i pomodori puliti con la buccia.
- Passa i pomodori tagliati nell’estrattore utilizzando il filtro a maglia più larga adatto alla verdura e alla frutta morbida.
- Cuoci l’estratto di pomodoro ricavato, con sale e basilico facendolo bollire finché non ottieni la consistenza che preferisci! Se necessario rimuovi una parte di liquido superficiale.
- Togli il basilico e versa la passata bollente nei vasetti perfettamente puliti e sterilizzati lasciando un centimetro circa dalla chiusura, quindi chiudili molto bene con tappi nuovi e gira i vasetti a testa in giù.
- Fai bollire i vasetti ancora caldi in una pentola (per almeno 30 minuti) immergendoli completamente in acqua (devono essere tutti completamente coperti) e separali tra loro con l’aiuto di qualche strofinaccio in cotone per evitare che possano rompersi. Spegni e lasciali raffreddare nella pentola.
Quando togli i vasetti di passata raffreddati accertati che il tappo di ogni vasetto sia concavo verso l’interno e che si sia fatto perfettamente il sottovuoto.
Presto arriva anche la ricetta della marmellata fatta sempre con lo scarto dell’estrattore!
